Spent the last 2 weeks in Japan and the jet lag had me wide awake at 4:00 this morning. What better way to spend those hours than prepping some ribs for the smoker? I'll probably spend the next week off getting more and more acquainted with my new WSM. My youngest doesn't like too much spice yet, hence the lighter colored rack for him. I'll post another pic once they are finished.


 
Looks great so far.

Nothing more relaxing than sitting around the smoker smelling smoke & having a ice cold beer!

I'm not a lush, fellas...I refuse to drink before 9 am. That is when I started this morning...lol. Unfortunately, no pics of the finished product. Cook took a bit longer than expected and I had two teenagers, my 7 year old boy and their momma yelling for lunch. Had to cut em up and dish em out. Turned out great as far as I'm concerned. Not as FOTB as the wife and daughter would have liked, but the flavor was great!

Think I might do the standard 2-2-1 next time to keep everybody happy.
 
When smoking...coffee or beer can be anytime. Just depends what time the smoke starts.
Ribs looked pretty good!
On ribs anymore I just cook to temp and test for tenderness.
I feel the 2-2-1 is more a guideline.

4 am is still night time and cleared hot for beer drinking for jarheads. Just sayin..... Good lookin smoke, satisfying the the littles can be a hard business. I try to always have hot dogs on standby. And yes coming back from Japan can be a b....!
 
If I may chime in. As a Canadian (and therefore a beer expert), it is not appropriate to drink beer before noon. However, as it is always noon somewhere, it isn't much of a restriction.

Nice looking ribs and a great way to spend an early morning.
