Are you opening the door a lot like you would with a grill? You can't do that with an electric. Just a thoughtBeen smoking 5 big chicken breat for almost 3 1/2 hours at 250 and been stuck in the 152-156 temp range for an hour.

I would be willing to bet large sums of money that it is not correct. Some possible alternatives with internal grill / meat probes - Maverick, ThermoPro, iGrill, ThermaQue. I also like to validate what the Maverick is stating the IT of the meat is with a good quick read thermometer (I have a Thermapen).

I only like therms that aren't attached to a smoker.Masterbuilt should drop the Bluetooth and contract with Maverick to make their probe part of the stock unit.

Seems like a remote therm would be best so you can see the temp without opening the smoker is that correct?
