So I fell asleep on a brisket nit reached 175 at last check 130am. Woke up at 445 to a cold smoker and brisket at 33. I have it in the oven wrapped in foil. Safe to eat? Chef Jimmy? B please help!
 
I'm thinking you meant the brisket was at 133 IT.

If the IT hit 175 & only went down to 133, it's fine.

Just finish it in the oven.

Seeing it was above 140, i would asume so. But i'd wait to here from others . Maybe PM chef jimmy.
 
It's safe to eat. It was probably only below 140 for an hour or so, even if it was 2 hours, it would be OK.

At 175 everything that can hurt you is dead, and cooling it down for a couple of hours is not going to change that.

I'm assuming that when you put it in the oven, you finished cooking it, right?

I mean you took the IT up to 195-200 in the oven, correct?

I'm wondering if I hit the Celsius button
I did that the other day.  One second the turkey was 163 the next it was 74.

  Stupid Celsius button had me puzzled for about 5 minutes. lol
