Ok so here was my first ever smoke

Equip-rec tec 680 --

Ok so the taste was pretty good although there was NO bark whatsoever. I really don't know why but I think I didn't put enough rub on the ribs. There was a good smoke ring but I think it could have been more (?) I did the 3-2-1 and still a little tough.  They ribs were marked baby loin ribs -  they were meaty juicy and very flavorful BUT there was NO bark and still a bit tough.

Ok advanced people give me that advice

The chicken came out great but of course those pics won't load - probably because I'm bad at computers like I am at getting a good bark and tender ribs --- but just a reminder that it wasn't a total fail as the chicken was great

I think I put to little rub on ------ PLEASE HELP
 
Sounds to me like you didn't cook the ribs long enough.

I cook my ribs to temp.

195=tender juicy

200=FOTB

Glad the chicken turned out well.

Why would there be absolutely no bark on them?

I look at the ribs here and by the time you would foil them they have this beautiful bark on them.

Al I have to agree about temp - should have left them in longer

But I'm still wondering about BARK 
 
I used to use the 3-2-1 method and found I got better bark and better ribs with just putting the ribs on the smoker for 6-7 hours sometimes 8 if they are really meaty. I found foiling the ribs really took away from the bark and I love bark. I agree with everyone else about smoking the ribs longer. You will find that depending on the ribs some will be be done in 5-6 hours and some need 8.

Never seen a temp here. Don't know what Equip rec tec 380 means Shouldn't be tough if do it right. Babybacks are 2-2-1. Slabs are 3-2-1. What kind of  smoker?  Low temps. 225 to 250. Something not right here. Send me a pm.
