St Louis Ribs on the WSM

I'm smoking a couple of racks of ribs today...


WSM loaded with half a basket of KBB, and a few Kingsford mesquite briquettes.  Wood chunks are hickory.


St. Louis style ribs rubbed with yellow mustard and Jeff's original rub.


On the smoker  at 225 for 4 hours.  Then I'll check on them.  The two ends that I cut off are for my better half, she wants them wrapped and sauced.  The racks are mine, no wrap, no sauce.

Outstanding looking ribs Mike. I am a fan of sauce on the side. The family uses the stuff sparingly.  Point for the bones!  B
 
Looks tasty,I prefer sauce in the side or none but will still eat sauced ones if that's what's popular. Especially when I'm not buying!
 
I prefer mine with just some salt pepper,some times a rub.

I hear ya b-one!  I prefer no sauce, but I ain't turning my nose up to some sauced ribs!
