Hey everybody, I'm Scott . It seems I've got the smoking fever so here I am. I'm from the eastern shore of Maryland and I've just upgraded my smoker from a cheap brinkmanship bullet to a full size trailer rig. No in between here lol. I should be able to pick it up in two weeks. In the meantime I've been doing a lot of reading and learning from sites like this one. I look forward to learning more from you guys. Have you bought a pile of wood splits? I'm not sure what is available to you but if you comb craigslist I'm sure you can find a local wood supplier if you haven't already.

If i may: i would recommend if you are smoking with something that big go to amazon and get a decent fire extinguisher. you can get one for like 20-30$ range. its one of the first things i did when i bought my Lang in case i had a grease fire or something catastrophic happen during a smoke. a big box of fire... doesn't hurt to be safe.

Also i have found that if i smoke in the front of the house in the driveway (which i usually do) i have neighbors i have never met drop by to talk to me about my smoker or want to see what I'm cooking. So i doesn't hurt to fill up the smoker and have a little extra to share with my neighbors or even take them some food once in a while to be friendly. i have heard on here esp from some people with bigger rigs and different situations (HOAs etc.) getting complaints from people about the smells and smoke etc. but if you share a ;little bit with the people around you you will make some friends for sure.

Thanks for the welcome messages. I appreciate the tips as well. I'm in the country on a farm so I don't have to worry about neighbors too much but I'll make extra just in case. ;-) [emoji]128077[/emoji] I do keep fire extinguishers around , that's good advice.

Autocorrect must've got me. That was a Brinkmann (ECB) smoker I've been challenging myself with not a brinkmanship [emoji]128556[/emoji]
Going with chicken legs and thighs today. I have them soaking in a salt, sugar brine with pepper garlic powder onion powder and hot sauce at the moment. Really looking forward to having a better rig with more room. I included a pic of the one I'm getting.mine has split doors on the smoker.
 
That is a nice looking rig! Did you buy that from custom pits va? I would love to have one that big but i would be stupid and fill it up every weekend and throw or give away 80% of it!

Hey Aaron, yeah it's from Custom Pits. They are make big it in GA and bringing it to the VA store. I will probably end up doing the same thing (making too much). Hell, I do it now. Haha. This is the A1 competition smoker they sell. I chose a couple of extra options on mine- split door on smoker and removable reverse flow plate with charcoal baskets added so I can use the smoke chamber for a grill too. it does have a grill on it at the rear that's pretty big but just in case I need it. It also comes with a propane burner and tank holder and fish fryer. I'll get lots of use out of that too. We cook crabs here almost every week in the summer.

Aaron, when you seasoned your Lang, what was your process and how did it hold up?

What did was spray the cook chamber down withe about a pint of canola oil. fired her up and go her over 400 degrees un the cook chamber and hit her with garden hose on jet for20-30 seconds all around the cook chamber. Closed the cook chamber and ket her steam. Then i sprayed down a little more with a coat of pam and got her hot again and sprayed again and then cooked a brisket on her.

I clean her the same way minus the grease spray everytime i cook with her. I have found a liitle pam or veg oil on the fb every 2-3 smokes keep any paint from peeling. When i clean her i wire brush the cook chamber spray her out hot and when cool white her down with paper towels. I use the paper towls to light my charcoal chimney too.

I know you will love that rig!
