I know its variable, but just a ballpark? I need to know how much meat will fit on my clay deflector plate
 
Two 8 pound butts should fit. I have had 2 in a 9X13 Roasting pan...JJ
 
So an 8 pound butt serves roughly 10-12 people? Or am I overestimating? Should I make 2 butts for a family BBQ?

8Lbs Raw yields 4-5 Pounds Pulled Pork at 5oz Samiches that's around 13-16 nice sandwiches. So Aunt Josie may go a little light but Uncle Lou can have 2. I would make 2 Butts, the Seniors in my family expect to be sent home with a plate for the next day and there are no shy eaters, even the Girls! Besides leftovers freeze well...JJ
 
thanks- this is REALLY helpful. Does that weight estimate include bone-in butts or bone out? 
 
Pork Butt, Bone-In and 1/4 to 1/2" Fat Cap. Trimmed, Boned-Rolled and Tied will have a 60%+ yield...JJ
