Got an 8.5# one at GFS. I only took off about a half# of fat. Rubbed it with my own rub and a little CBP. Fired up the smoker and it went in at 8:00am The 'Griller seems comfortable in the 270 range, so that's how we roll today. Nothing but Hickory...
I figure I'll flip it fat side up and stick a Maverick in it at 4 hours...
