Made Roast Beef Saturday

Hello everyone,

 Its been a while since i had a good roast beef sandwich and since i rarely buy roast beef at the deli counter for they charge, i bout a sirloin tip roast and decided to make sammies myself. here is the process with QVIEW

First soak in Worcestershire sauce and coat in Montreal seasoning and let sit in the fridge overnight.



Next i put the meat on my roasting/rib rack 


I put on the smoker at between 240-285 degrees until i reach the IT of 140 degrees


The i wrap in foil and let rest/hold for about an hour on the counter


I slice with my deli slicer to about 1/16 of an inch slices


The i take 2-3 slices a a time and vacuum pack them and put in freezer to make sammies

Nothing better than a roast beef sammie with a little horseradish.

Why did you use a rack & not just put it on the grate or is there a pan under the rack catching the juice?

thank you Al!

i did not put a pan underneath the rack to catch juice i used the rack because it makes it a little easier to maneuver on the smoker. it also lifts it up a few inches to allow more smoke on the bottom of the meat. its not necessary but i guess its a habit of using it from my WSM days.

I ate RB slices fro breakfast Sunday because they were sooo good!

I use a Wire cooling rack under mine, in a Pan for the same Reason.

The Pan keeps the clean-up down, and the Wire Rack allows the Smoke to get all around.

Wow nice.  I do the same thing with bone in turkey breast, and I love roast beef.  Definitely going to do this.

That does look tasty! Only two or three slices per sandwich?!? Sounds a little light,or really good portion control!
 
That really looks great! Nothing like a roast beef sandwich. Probably one of my favorite things to eat. I second the idea of horseradish sauce! Tiger sauce like they put on Baltimore pit beef would be awesome on that roast beef too. Damn you made me hungry now haha Points!
