Smoking pork question

Hey guys. New here and I got a quick question. I smoked a boneless pork roast overnight in my green egg last night and it cooked pretty high (around 300-330) for the first couple hours then dropped to 240. By 3am is was around 160 and when I woke up and pulled it, it had been sitting around 130 for a couple hours. My wireless probe is saying is cooked at an internal temp of about 216 for about 2.5 hours before starting to rest back down around 140 with the egg. I pulled it off and shred it, added my pineapple and sauce then put it in the oven at 375 for about and hour and a half like I always do for sandwiches. My question is, this is the first time my egg has dropped like that in the middle of the night. Even tho internal temp of the pork was over 200 for a few hours, should I worry about it having dropped down around 150 for a couple of hours before pulling it. Again I did shred it and it sat covered in the oven for a hour or so too. Sorry if this is a silly question, but I'm pretty new to pork and overly cautious

It did. Looks like it peaked at 215-220 internally and stayed around there for a couple hours. I was only worried about it sitting in the green egg for the three hours following while he temp dropped down to 150-140.
 
If the IT was at 200, your fine. I finish my pp and then put in a warmer all day while serving. All the same.
 
Thank you guys. I was pretty sure it was ok, having been at over 200 for a couple hours. I'm just a little weird about pork still. On another pork related topic, how long do you guys usually keep pulled pork leftovers before tossing them out? I've got a lot of pulled pork

Vacuum pack and freeze. or I like to cook a carolina hash or brunswick stew with my leftovers. Then can.

"before tossing them out"????????????  Good grief Charley Brown.  I NEVER toss PP leftovers out.  They just keep getting better.  Believe me when I say, you'll find dozens of different things to do with the leftovers.
