Overnight Butt on the Mini WSM

Seasoned this bad boy up before going to work today and just got home and have it waiting for the charcoal to get the chamber up to temp. I'm shooting for 250 but only lit 10 coals and have it going from edge. Using apple and cherry wood. First time doing an overnight one so we shall see how it goes. For 7 dollars it was worth a try. Originally I planned on doing PP for a local beer festival my wife and I are going to with my childhood best friend and his family but found out they don't allow grills or any heat source to bring up to temp. I am pretty sure I will be able to keep it warm in a cooler if I do still decide to do the PP for it otherwise it's cheese and sausage.

I'm going to set my alarm for 4 to check in it since my Damm maverick won't work. Transponder is good but the main unit won't allow me to set temperature or anything. So it will be baby sitting with personal alarm clock and hope the wife sleeps tthru it.

Sitting around 225 right now so I'm going to try to sleep little... the window has great smoke smell coming in. I'm not to worried of a spike in temp as its been steady since I got it up there and shut down some vents. Cya in a few hours
 
Woke up at 4 to check temp and it was holding around 225 so I left it go. I also probed it and temp showed 155.
Just checked on it again now and we were at between 167 and 170 so I wrapped it and put it back on. Juices were just rolling out of it.
After 7 hours of going and 1 vent wide open with a another just slightly I still had coals below. Probably would not of made it until the butt was done so I added about 15 more to keep it going.
So far pretty impressed with how well it lasted and all.
Back with pics when done.

ended up being a boneless butt that I got... oh well for .98 a pound I'm not complain. Good flavor and not over powered smoke but small ring to it.
all shredded up with my new claws and silicon gloves I bought this week. Worked great.

Thanks for watching. I'll be doing this again just not on the night that I just got done working 6 straight 12s because I'm a little on the tired side today.

Adam that is a great price for boneless,I love love them gloves pic hot food up,wash the gloves while wearing them.Points for the long haul.

thanks for the point Lance. It is a great controlled smoker and I'm really getting used to it which might mean a larger is coming to my group of smokers.


The PP looks great, I love an over night smoke, perfect and never a rush for the all nighter.

How was the beer festival?

thanks! The beer festival was very nice. Drank probably to many but didn't have one that I dumped out. 3 full barns full of micros with some having 5 different options so I got beer I enjoyed. Even tried a dill pickle beer which I would get as a chaser for bloody mary.


Looks like perfect pulled pork to me!
