Seasoned these ribs a couple weeks ago and had to postpone my smoke. Pulled them out of the freezer last night and smoking today.

Rain, wind no problem for the WSM!

Settled in at 217. So that's where it's going to ride!

Took longer to get up to temp couldn't figure it out. Realized that one of the lower vent, which I thought was open, actually was closed! Bonehead!

Update, TBS, and smells fantastic!

Strayed from my typical cherry and Kiawe. Used Apple and Kiawe this smoke.

SPOG is what's on the meat.
 
HA, I hate long cooks.   PP is my only long cook and I do them overnight so its a short cook.
