Hello All,

My name is Max. Accounts payable specialist by day and father of 2 by night. I'm 28 years old, live in central NJ, and fell head over heels in love with smoking ribs last weekend. Walked out of home Depot with the 100 dollar rivergrille cattleman 29 inch offset. It has its shortcomings, as I'm sure you all know, but those will be addressed with the more common mods this weekend. Can't wait to take another crack at em, I'd die a happy man if I could get out of my cubicle and smoke it up full time. Any links or pointers are warmly welcomed.

I to have the bug to leave my office and computer and go to Black Betty (my smoker) every day all day. but alas i am regulated to once or twice a week. You can make good q with a cheapy offset just takes more work. one day you will graduate to a MES or WSM smoker and it will continue.

For rib pointers i recommend trying the 3-2-1/2-2-1 methods and adapt from there. Smoking AL has a perfect rib step by step at the bottom of his post that is good too.

oh BTW sign up for the newsletter its an awesome recipe a week kinda thing makes a great email distraction from work!

yep... welcome to your new addiction (the forums) ... some folks in your area are trying to get a gathering up and running... as you'll see here on the forums there are gatherings all over with members getting together and having a great time.... but also you wouldn't believe some of the techniques that are learned at these gatherings... here's a link to the one in your area....

Unfortunately (or is it fortunately?), there is no cure for the mad pig disease.  However, with regular inhalation of thin blue smoke and consumption of tasty smoked meats it can be managed to the point most sufferers can actually function normally in society (except on holidays, weekends and "game day").....
