Risky Brisky hitting the smoke!

Started last night with 2 pieces of brisket that my local grocery store had on mark down (here brisket is hard to find below 5 dollars a pound). I loved the way we did the whole one a couple summers ago so I decided I was going to do about the same with this one. I mixed up an injection of beef broth (1.75 cups) and worcheshire (.25 cups) I added in a little of fresh cracked pepper finely cracked. Whisked and started to inject the pieces. Then I used the rub I found online (I'll try to copy the recipe on here) on 1 of them and just plain lawrys on the other. Let them rest in the fridge all night and took them out this morning while the gasser gets the smoke rolling (raining and I'm not fighting with my little wsm). I hit the one with the rub with a little more and the other I tossed little cracked pepper and light shaking of lawry garlic salt (didn't want to get it to salty). I tossed them on the gasser with hickory when it was up to 225/250. Added a dish below which I'm going to add the rest of my injection to and baste the Brisky with it in 5 hours.

I'll just hang out and have some toast while I wait for the pics.

Well first one I would consider a smoke. I did some chicken on the kettle after we got done moving one night. I really was hoping to have my pellet grill back up and going but haven't got it fixed yet.

These are from last night to this morning. The last show are after the added seasoning.

FINALLY GOT THE QVIEW up and going!

got a bag of baby carrots and that long one made it in there...

this was about a hour ago and they were 165 and 170 when I probed them. I plan to let them keep going and not wrap as I am basting with the little au jus like mixture that's below it. Smells amazing. My neighbors are all going to be coming over to see what the new guy is all about.

With that aroma carrying thru the area,Your going to need more meat Looks good,my camera battery died didn't get a before foil shot.

Decided to wrap to get thru the stall. It was not moving at all and want to try to have dinner around 6 cst.

Good luck buddy mine doesn't have to be done til Friday! Rain for tomorrow and driving to Mass. on Friday. The kids love when my fishing trips get blown out,and I have to come back up.They eat good LOL

My favorite trips are to the northeast. Loved my trip to Maine last year and can't wait to plan another!
