So.... I was left home alone on Saturday. Mrs. BD went on a girls trip with her sister and my daughter.  I've been traveling a lot and had a ton of chores to do around the ponderosa anyway.

I needed something easy and didn't need much attention.  Chicken on the  steady as a rock Mini fit the bill.

Thank you Gary! I watched that IT. 165 IT at the breast and then let her sit for a bit made for a very moist bird.  This was a "free range" chicken.  I'm not sure being "free" how it found itself on my smoker.... But happy it did! B

It was just a smoked chicken kinda weekend. Great job sir. 

That shreded chicken, tacos? enchilladas? BBQ sammies? Ooooo... smoked chicken salad? Gumbo?

Kev. you've got a great eye my friend.  Those are indeed oak chips.  And that color on the bird is from oak.  One of my projects while the missus was away was to saw / split more post oak for the BIG smoker (AKA Locomotive Breath).

Those are chips from my chopping. I gathered a few handfuls and tossed em in the beer cooler ( by that time was empty). 

The color was okay.  But not as near as pretty as yours turned out.

You've got a good point about the rub on the skin diminishing the appearance. I look at mine, then yours and the difference is clear. b
