MES 40 Rack Question

Hey everyone!  I had a question about the racks in the MES 40.  Most of the post have you put the meat on the top two racks.  Can you cook on all five racks?  If so, do you have to rotate the racks for even cooking?  Just curios
 
Yes you can use all the racks. 

You need to find the temp differences in your smoker.

On my MES the hot spot is the right rear corner on all the racks.

I've got four racks and cook on the top three.  I would rotate the top and bottom racks when using three.

Like Kurt,

When I had 4 racks, I used the top 3.

Now that I have 6 racks, I use the top 5.

This is because the bottom rack is too close to the heating element. IMO

If I only use one, I use #2.

If I use 2 Racks, I use #1 and #2 in the 4 rack unit, and #2 and #3 in the 6 rack unit.

If I were to use all 3 in the 4 rack or all 5 in the 6 rack, I would rotate the Top & Bottom rack being used.
