Ok, so the sticks got finished kinda late last nite so didn't get any pics just turned the smoker off ! So tonite when I got home, got them out of the MES, cracked a cold one & cut em up.

Pepperoni


Chipotle Wildfire


These sticks are great ! We tried some of each one & they are good flavor & moist, real good stuff !

awesome stuff, I made some snack sticks last weekend with the kitchen aid attachment and it was a pain, need to get a real stuffer!

Thanks for the nice words, I've never used a kitchen aid attachment. I'm gonna try to convert this water stuffer to a compressed air stuffer run off a compressor !

Thanks JP, these recipes are dang tasty ! Hardest part for me when I started was finding the right pressure to fill the hog casings, after a couple blow outs I figured it out.
 
LOL..... I obviously missed this somehow.

I was worried about the stuff on those sticks, boy that collogen sure sucks it up when heated. Mighty impressive.

Yea Foam, the collogen casings work pretty well on these snack sticks. I wanna try sheep casings for these at some point !

Brats & hot links are great, sticks as well ! As far as the helpers, things are never boring with these two ! :biggrin: Really though, I enjoy the heck outta them helping ! Appreciate ya dropping a line & the point !
 
Well, I have used a few packages now of sheep casings. If you ever need to get completely frustrated and lose your temper, they are great! Don't get me wrong I like 'em, but loading them on that little stuffing tube, well you better have your game face on. Its not for the those easily intimidated. You need to have your head on straight and focused. LOL

Don't let me scare ya off, I still love 'em.

I have got to try some collegen so I can at least talk about them with some shred of knowledge.

Every time I pull out some sheep casing, I swear my next order will be for pre-loaded. LOL

Thanks for the info Foam, I'm wanting to try them to see bout the snap vs the collagen on the snack sticks. The collogen have a decent snap, guess it's just my curiosity gettin the better of me. I also would like to try some link breakfast sausage as well... I would imagine as ya say that them little buggers can be a PITA ! I will be patient & maybe have a couple cold ones to steady my hands.... LOL

If ya try the collogen, just in my experience with them & I don't know much for sure... but after ya load your stuffing horn have a good ziplock bag to keep the rest of them in as they can get brittle kinda quick on ya ! Ask me how I know that ! :biggrin:

Nah, they aren't that hard load Foam.

Just soak them in water for a few days, they get stretchy. Finding the open end is the hard part.
