MES 30 and AMNPS problem

Hi guys, I have been having an interesting problem with my AMNPS going out during a smoke.  I read here that Bear suggests putting the AMNPS on the two bars in the lower left of the smoker but when I do that, it goes out every time.  If I put the AMNPS on top of the wood chip burner, it works fine.  I have been letting the AMNPS smoke outside the smoker for like 10-15 mins prior to putting it in the smoker to make sure it is good and lit (the first 2-3 inches of pellets are black and smoking), but I am stumped.  I would like to put it where Bear suggests as this then lets me use the bottom rack for food (if needed.)  Please help.  Thanks.

Ok will do, thanks.  One other quick question about the MES 30.  I am doing some ribs right now with the 2-2-1 method so I am not using meat probes for IT.  The MES is saying 238 and the Maverick probe (which I am just using to measure IT of the smoker) is only saying 198.  Which do I believe and is the normal for such a large difference?  Thanks.

Never trust the MES read-out. The Maverick is always the most accurate, as long as you check it with boiling water whenever there is a question.

IMO the Mav smoker probe is also more accurate when measuring the Smoker Temp, and the Mav Meat probe should only be used to measure the inside of meat (not smoker temp).

These are my opinions, going by how they work for me.

Bear, two questions. Should I be using probe 1 or 2 when using the Mav to check smoker temp? Or does it not matter? And maybe a dumb question but how do I check it with boiling water? Obviously stick the probe in boiling water, what should it read, 212*?

It depends on which plug-in it is in.

My point (and some disagree) is that if you have the old style probes with your Maverick, the long one that is bent should be used in the Meat, and the short straight one is for the smoker temp.

They are interchangeable in the Numbered "1 and 2" holes in the unit.

Bring a pot of water to boil.

Stick the probes in, being careful not to touch the bottom or sides of the pot, and don't let the connection between the cable and the probe get wet.

It should read close to 212°, unless you are at a high altitude. A degree or 2 off doesn't matter. IMO

Both of my probes are long and narrow silver probes, so I am thinking I don't have the older style.  Therefore I am assuming that it does not matter which probe I use for smoker temp.  I also am assuming that I can use #1 or #2 for smoker temp as well.  Would you agree?

When this next smoke gets done, I will check the probes in boiling water to see?  Thanks for the explanation.

I agree with both of your assumptions, as long as you are just using them to measure the temp.

If you're going to set any of the alarm functions built into the Maverick, you would have to have them in the proper plug-ins.

I never had one, but I believe you have what they call the "Hybrid" probes.

Just did the boiling water test.  Both probes tested at 212*.  So looks like the probes are functioning properly.  I had to raise the temp on the MES 30 to 252* to get the Mav probe to read 235* earlier.  Glad I did, only problem is I am not sure the total time the smoker temp was at 235*, I am guessing it was for at least 3.5 to 4 hours.

You're good to go now!

Just keep doing that---Adjust your MES up or down to get your Mav to read what you want.

It will cycle up & down, but try to get it to average the temp you want.

Like if you want 220°, a cycle of 210° to 230° would be Fine----Or 215° to 225°.
