Cold smoked ham continued, ham quesadillas on the flat top, qview!!

We had a little ham left over after eating it for breakfast, lunch, & dinner.

So why not quesadillas. Here we go!

2 large flour tortillas, 1 chopped onion, 3/4 cup chopped pickled jalapenos, 4 slices Swiss cheese, 1 1/2 cups Mexi-cheese, & 4 slices smoked ham.


Fire up the flat top & put one tortilla on.


Start building with 4 slices of Swiss cheese.


Next some Mexi-cheese.


Then chopped onion.


Chopped jalapenos.


4 slices of smoked ham ( the star of the show )


More Mexi-cheese.


Then put a little oil on the other flour tortilla & put it on top.


Put a lid on to get everything to melt together.


Flip it over when it gets nice & brown.


Cook for a couple of minutes longer to get the other side brown too.

Then slice it up. We have a big pizza knife that works really well for this.


A little sour cream & salsa. And of course an adult beverage.


It was a great lunch!

I know what you mean Richie!

I have so many projects in my mind, but how in the world can I eat all this food. I have 3 refrigerator/freezers and 1 freezer. They are all full of smoked meat or meat ready to smoke.

Thank God I have a generator for power in case of a hurricane.

I think I need to have a block party once a week so I can cook my projects & get rid of the food quickly.

I'm not a big fan of quesadillas, but looking at that one, I just might have to rethink this.  That looks absolutely fantastic (I was going to say delishus, but gave up after 4 tries to spell it right  LOL).  If Miss Linda ever see this post, I know what I'll be making--she even likes the fast food variety, so she'll love this one.

You have to get out more!

You never had a quesadilla? 

Your too far up in the woods.

You can put anything you want in them.

Beef, pork, chicken, or just cheese & veggies, great comfort food.

How about some thin sliced roast beef with horseradish sauce & Swiss cheese.
