AMNPS Or AMNTS for MES 30 cold smoking

Just going by what I've been doing for 6 years.

I use Dust when I'm smoking with a Smoker Temp of less than 200°.

And I use Pellets in my AMNPS when I use Smoker Temps over 200°.

You won't need the Tube in Maryland, and it puts out too much smoke for a little MES 30.

Thanks everyone for their responses. My other question is if I cold smoke cheese would I just use the AMNPS without running the heating element ?
 
You will need to warn the cheese up to room temp so condensate does not form....   warm the smoker up to 100 ish deg. F for a bit, put the cheese in and get the smoke going.....   Then turn off the heat....   with the smoker warm, it will draft....  keeping the AMNPS going....

As long as smoke is coming out the exhaust you are fine...   if the draft stops, you may have to turn the heat back on for a few minutes to get it going again....

You will need to keep the smoker above ambient for the draft to work and the pellets to stay lit...

Yes. And using Dust instead of Pellets will help keep the cheese from melting.

And if the ambient temp is a bit warm, you can fill a Jug or two 3/4 full of water & freeze it. Then put that between the AMNPS and the cheese:
