Been getting into sausages, snack sticks, and bacon here lately so I needed an easier way to cook at lower temps. My performer is just to much work trying to keep low. Was gonna buy but I like to roll my own so I decided to build.
Decided on 2x4's and 11/32" plywood with fiberglass insulation in between. Propane burner in the bottom and cement board for 20" as well. Just realized the pictures aren't on this device. I'll send them over as soon as I get a chance.

So it's been a month and I'm still not "done". It's running though. Did some snack sticks after seasoning a bit.

Also made a water stuffer. Guess I'll start a different thread on that if anyone wants me too.

I have the same kind of stuffer but instead of using water I hooked up a 3 gallon air compressor

with a quick shut off value to control the air flow and speed filling the casings.. just a idea you might like.. dnovotny
 
Nice looking smoker. Fixing to start a new one my self. Going to make a 4x4. A lot of people say don't use fiberglass but if the inside is sealed what difference does it make? Not planning on going over 180

You gotta be careful with using air. It compresses so you could potentially blow your whole deal apart. I'm having trouble keeping all the water sealed. Maybe a tbsp worth leaks through and messes up my last bit of sausage. Maybe should try the air. Anyone know if CO2 if the same as air as far as risk?

When I was searching the web I remember seeing a few folks use fiberglass. Most use foam, but my lowes doesn't carry it and I hand the glass laying around. I'm not hot smoking in this and it's sealed up. I was worried about the glass molding from rain water. Looking forward to seeing your build thread man!
 
yes that why I use just a 3 gallon air composer and a quick value to control the air pressure going in.. I had mine now for 5-6 years

and this idea really works.. just a thought..

Using compressed air "can" turn your stuffer into a bomb....   very dangerous to anyone in the area...    Consider returning to water for the pressure source....
 
That's the same size compressor I've got. What's a quick valve though? Anyway of rigging a foot pedal with air?
