Turkey Legs for Days.......

Just to let everyone know I am still alive and to prove I still own a smoker, here are some turkey legs that I smoked today........Cured with Pops wet cure for 3 days smoked for 8 hours with a bit of Hickory........ Just a FYI, I was able to buy a case of legs for .99 a pound..... Their were 13 legs in this case!!!!! These legs are huge!!!!!! Shoneyboy

Before Thanksgiving one of the local AG stores had legs and wings as a weekly special for .99lbs.... I bought a case, cured and smoked them..... After about a week I called the butcher back and asked him if he had any more, he checked and said yes and I will let you have them for .99lbs too :yahoo:..... So I made sure to bring him 2 of them when I went by to pick the 2nd case up....To be honest this is my 6th case I've done since I started :sausage: .... I tied a green and red ribbon around the bottom of them and gave them out for Christmas presents to all of my friends.......I lost count, but I know at least 60 of them became Christmas presents....... Since then he has been special ordering them for me....it cost me a couple of them now and then, but I'm still getting them for .99lbs......LOL Shoneyboy.....

Thanks DaveOmak.....I had a rough few months in 2015......I'm praying that it's over, I'm healthy and happy to be back in the saddle!!!!! Shoneyboy......

Did you use the sweet Disney World brine? Or one of your own?

I used a modified version of Pops wet cure (@Pops) its comparable to Disney World brine , but not as sweet...... 1/2 cup of Kosher salt, 1/2 cup of white sugar, 1/2 cup of dark brown sugar and 1 table spoon of cure #1, all in a gallon of water, mix well. Just a FYI, it looks like ice tea so don't leave it out alone........Mix as much as you need to cover them , I also use a plate to keep the legs from floating..... Soak for 3 days in a bucket....... Keep them cold!!! With my limited refrigerator space I ice around the buckets in a ice chest........Hot smoke with Hickory until they are 165 degrees IT......... I have several people that I work with say they are the best thing they have ever eaten....... They like them so much they are willing to kick up a couple $$ to help cover my cost.......Shoneyboy
 
Looks great! Sounds like you've perfected them! I have done these twice with Pops brine and neither time was I crazy about the tenderness. You went 8 hours of hot smoke to 165 internal? That seems like a really long time, were you running your smoker at just 170 or so? I've done them at around 275.
