Did some beef short ribs over the weekend

Let me just say that I absolutely love beef short ribs. They are always very meaty and full of flavor. I have found that they are hard to find though so everytime I find some i buy them and throw them on my WSM. I smoked them for 5 hours between 225-250 using the 3-2-1 method with around four chunks of hickory and one chunk of maple. 




A few thoughts on my smoke:

They came out pretty good although they could have been more moist and tender. Could it have been the grade of meat?  I seem to recall that they were select. I'm going to try to find some prime beef short ribs next time. 

I noticed that the smoke flavor didn't penetrate the inside of the meat. it tasted mice and smokey on the outside but when you would bit in the center it wouldn't taste like smoke. What could I have done to make the meat taste more smokey?

I think you are right select grade won't have the marbelling that choice or prime will have.

I've said this before, when you are around the smoker all day smelling smoke you become de-sensitized to the smoke. Everyone else will say it's got plenty of smoke flavor, but you won't agree. I always make sure I leave some leftovers to try the next day. I guarantee you they will taste plenty smokey the next day.

The rib in you "plate" picture looks pretty moist, (And GOOD!)

Did you wrap and rest the ribs once you took them off the smoker?
 
Nice looking ribs!  I agree with SmokinAl too!  That was plenty of wood for a 5 hr smoke.  Fix me a plate, I'll let you know!

 Thanks for all the compliments guys. Yes I did wrap them one eyed jack. I guess they're right when they say that you are your own harshest critic? The reason why I made those points is I think there is some room for improvement for my ribs. They did taste good though.

I know just what you mean;  I usually wind up thinking that I could have done just a little better.  (Sometimes a lot better 
biggrin.gif
).
