I'm new to the forum, but smoking has been a hobby of mine for over 15 years.  I decided a few months ago, that this Spring, I will take it to another level.  I have ordered an 18 foot concession BBQ trailer that has a 6 foot porch which will hold my Cadillac rotisserie smoker capable of 40 pork butts in one cook.  I live in Catonsville, MD outside of Baltimore.  When the trailer is completed, I will be driving to southern Georgia to pick it up.  From there, I will tow the trailer to Missouri to fetch the "Prince of Darkness" ( my name for the smoker ).  The Cadillac people will weld it down to the trailer, run the smoke stacks through the roof and if all goes well, i'll drive the sucker back to Baltimore.  I plan to sell in and around Catonsville.  Luckily, Catonsville is a closely nit small town with a lot of local support for businesses.  It also helps that I have hosted a BBQ party for over 100 folks for the past 12 years.  I plan to cook old school with just wood when at all possible.    I am also a professional photographer, so you can count on a lot of pictures once things get moving.

Welcome to the site Mark and congratulations on your big step up in the smoking game.  Best luck with your new venture.

I look forward to reading about your progress and seeing your pictures.
