Wow, that's one load of sausage you got done CB - probably going to have to get an additional environmental air permit for all the smokers going down there, not to mention global warming LOL.

When he first came into our little group, he was kind of shy and didn't ask many questions, but once he got comfortable he took off! Now, he constantly talks and cleans like a mad man! I'll bet my stuffer is cleaner now than when I bought it.

Ever had someone run a swiffer while you try and grind sausage? :ROTF

One of the guys that was with us yesterday just sent me his first batch from his MES. This was his first time smoking sausage from 120-170. He said it takes a long time, but it's the best he's ever eaten!

That's just over 11 pounds of Italian.
 
Everything looks great! Well almost everything, not a menudo fan. Had a bad batch once that tasted like sweaty socks! Haven't been able to stomach it since.

Yeah, you had a bad batch. I live for the menudo at El Torito, some Sundays it's a required prescription. :biggrin:
 
Never could get excited about Menudo myself, but know a guy who does.

I live for PHO! It's the PHO-King cure when to many beers are consumed!

I have never had Pho. I hear about it all the time from coworkers, and they go get it at lunch some days, but I haven't tagged along, guess I should soon...

I think the Summer Sausage Gods are toying with me today. I was at 145 30 minutes before I took this pic... It'll take off soon, but this reverse stall is a PITA.
