Tomorrow will be the 3rd annual sausage making Fest that I host. Each year 4-8 of us get together to lie, drink, make sausage, and visit. This year should be a lot of fun since it will only be 5 of us and one has never made, or had, homemade sausage! :yahoo: :sausage:

We have just over 130 pounds of pork butt, 22 pounds of venison, lots of jalapeños, and some hi-temp cheese. Since my sheep casings didn't arrive, all sausage will be in hog casing or loose.

We plan to make the following:

Italian - links and loose
Breakfast - loose
Summer Sausage
Jalapeño cheese (venison) - links
Polish kielbasa with a Cranky customization - links

Tomorrow (Saturday), I'll try and post some action shots, and Sunday I'll post the hungover smoking shots. :biggrin:

CB Sounds like a fun time,,,wish I was closer I would come and help,, THERE IS NOT ENOUGH BEER IN THAT FRIDGE!!!!!!

It would be a LOT of fun if some of the SMF folks were there too!

Hmm, may have to plan something like that for the spring! Gary S, you listening?

That's a sausage making factory  Wow !!   looking real good, And I am listening, we need to do a Get together maybe Spring when it is still nice

All that sausage will be great
