Beef ribs and Stuffed pork loin

Weather sucks, Nobody wanted to work outside today, so may as well cook dinner(no sv involved). Had an idea for the stuffed loin in my head, so went shopping. The ribs somehow jumped in the cart, they were priced rite and the big ones are meatier than normal ones at this store.
Seasoned the big rack with Tatonka dust, and the small ones with black ops. Normally I'd wrap after 3 hours but no foil jumped in the cart, so I'll let em ride with a couple spritz of apple juice. And some bacon that will be half cooked and go in the loin



The stuffed loin came to me in my dream last night. First I chopped up fresh parsley, rosemary, orange bell pepper, pineapple, feta cheese, the half cooked bacon and tatonka dust. I tried to slice the loin and unroll it as flat as possible. Used the meat hammer a few times. Sprinkled with Mad Hunky and placed stuffing on top and rolled up best I could. Used a combo of butchers twine and high temp rubber bands to hold it all together.
Smoking at 225 with maple/hickory/cherry blend
