First Pork Shoulder- Happy New Year's Day! My lab don't care

Using instructions from Jeff's book with a lot of careful study of @Bearcarver's fantastic Step-By-Step, I am attempting to smoke a pork shoulder for my family today. (I'm also doing a side of mustard greens as I prefer those to collards and my momma is making the Hoppin' John!) 

 I didn't get the pork on as early as I wanted today-- about 8:30 before smoker was up to 225 and this is apparently a lot bigger than I anticipated. But, if I mess it up, I bet it will still be good! :)

Anyways, here is how it looked when I opened it up at 12:30 to put thermometers in.


I am using the meter built into the Cajun Injector and a separate one. They seem to run about 5 degrees different.


But, a Certain Lab ain't interested in my smoking efforts:


So, I was hoping to pull it around 6pm, but I'm thinking that it's not going to hit 205 for quite a while. Hope no one minds eating late!
 
OIH, What time did you eat ?

Great looking meat. I did a pork butt yesterday also. 6.7 pounds and took almost 15 hours. It stalled for about 3 hours around 155. But I got some great pulled pork out of it.

That is looking great!  My last butt was 10 lbs and took 20 hours!  Hope yours wasn't as stubborn as mine.

It was! I finally pulled it about 11:30! I didn't know about this "stalling' but it's for real. I'm determined to have a better result next time. Although, this was a delicious failure.

  Sorry it didn't work out yesterday.  Shoulders can be butts if you know what I mean.  I started my last one at midnight and was still smoking at 10:00 pm the next day.  I'll start the butt at the time I want to eat on the day before next time.

Ha! Yes, I know what you mean. I had gotten that on sale and frozen it even before I knew there was a "Shoulder Butt" and a "Butt Butt." But I was determined to try it. I'll try again, but I'll be ready for your 24 hour idea [emoji]128518[/emoji] But in the meantime, I'm going to try some other things [emoji]128522[/emoji]

Looks real tasty, yep butts can be stubborned for sure... Let us know what your next smoke will be... If your ever lookin for a quick & tasty appetizer, try some ABT's... They are really good ! Thumbs Up

Yea, they are awesome as are the shrimp... There is a member here that does garlic butter shrimp that looks super tasty ! I want to try it next time we do shrimp !
