First real rib smoke

ill be throwing in some baby backs for Sunday. first real smoke I've done a were I've cooked in the oven for most the time then through them in the smoker for little while. 

started them tonight with a brown sugar rub that has some what of a kick 

1/2 cup Brown Sugar
1/4 cup Paprika
4 T Coarse Salt
3 T Coarse Pepper
2 t Onion Powder
2 t Garlic Powder
2 t Celery Seed
1 t Cayenne Pepper

added a little more cayenne for some more spice

now ill let them sit for till Sunday morning

the bbq sauce I'm making is a sweet coca cola bbq sauce first time I'm trying this as well so well see how it is

• Cinnamon – 1 Tbsp.
• Dry Oregano – 1 Tbsp.
• Brown Sugar – 1 cup
• Black Pepper – 2 Tbsp.
• Chili Sauce – 1 pint
• Ketchup – 24 oz.
• Coca-Cola – 16 oz.
• Prepared Mustard – 2 Tbsp.
 

I plan on doing the 2-2-1 method at 200-225

Let me know what you guys think and if you have any pointers let me know!

2-2-1 is probably ok. I definitely prefer more of a 3-1.5-.5 kind of smoke when I wrap. You can also try to run them straight through without wrapping. Will take about 5 or 6 hrs. @ 225/250. I used a mixture of pecan and apple today and I was very pleased with the results.

thanks for the info will monitor for sure maybe do the 3-1-.5.

do you guys usually spray with apple juice? or just let it ride out
 
For pork ribs, both baby back and spares I prefer to run them naked and not foil. I do not spray them. every time you open the smoker you loose heat and smoke. If I'm going to add a sauce I do that during the last hour and I only add it once. Plan on 4-5 hours for baby backs. Spares take about 5-6. A good test to see if they are done is to pick the ribs up about a third of the way through the rack with tongs. If the rack bends 90 degrees or close too you are done. The meat shouldn't fall off when doing this. I will usually check at around hour 4 and then every 15 minutes after that.

Yes 225-250 for low and slow smokes. I also eillmdomhigher temp rib smokes too. Running the smoker 285-325. Ribs take around 3 hours.
 
Look like you're off to a great start.  I would keep the temps between 225 and 250.  Good luck, I'll be watching!

yeah he's always wanting something. An hour and ten minutes in and it's rolling pretty good making the bbq sauce now
 
Yup... Ditto to all those comments.  Ya did a great job. I hope you enjoyed the cook as much as you did eating those ribs! b
