Had this rack and chunk of TT in the freezer. Been looking forward to smoking them. Hard to rank, but TT and ribs might be my top two favorite smokes so why not combine them?

Going to be home all day removing Christmas lights so a perfect time to smoke. Smoking with combo of pecan and apple for the first time. TT rubbed with Tatonka Dust.

Wanted to try something so I wrapped the ribs. I reduced a grape, apple marmalade and added some water, then wrapped the ribs in it. We'll see if it make much of a difference. It probably won't but worth a shot.

Well, they're all done and ready to be eaten. I have to say, not bragging, but I really nailed these ribs. Yeah, I'm hungry so everything tastes better but this is a top-3 smoke for me.

How long did you cook your ribs and at what temp?  Rib seem to be something I just can't perfect, I have the sausage making down pat but seems like I just never can get my ribs to look like yours LOL! Looks great by the way.

Hi Kovaku,

In this case, I smoked for 3 hours, wrapped for 1.5 and back on the smoker for about 30 or 40 minutes. I kept the temp pretty consistently between 220 and 235. I did have a quick flare up to 245 but I don't think it affected much. I did have smoke going the entire time.

Just keep practicing and you'll get it. Ribs are awesome and I prefer baby backs.
