Looking good. I do the 3-2-1 method for ribs. 3 hours smoke, 2 hours wrapped in foil with some juice, 1 hour unwrapped basting with sauce.

Thanks Jayace. I put in some butter when I foiled them. I'll baste one rack with sauce for the last hour and skip the other, my wife likes hers with sauce on the side :-)
 
Be careful - The 3-2-1 method is for spare ribs. You want to be closer to 2-2-1 for baby backs.

Nice job JetsKnicks - ribs look good. I'm with your wife, sauce on the side please. In fact, most of the time I don't even use sauce on my ribs.

Thanks Bryce. I like a little sauce on them for the last hour but i emphasize the word little lol. Some folks think its not a rib if its not served with sauce dripping off it but i want to be able to taste the meat.
