I got some great suggestions and tips in my Roasted Bell Pepper Cheese thread and have made the recipe several times with the revisions.

Original post;  http://www.smokingmeatforums.com/t/237205/roasted-bell-pepper-cheese

I mentioned wanting to use fresh garlic as opposed to garlic powder and Chef Jimmy J came to my aid with good instructions on how to get that done.

Chef JJ also mentioned using fresh onion and adding some bacon to the mix, and so I added both of those to the recipe.

Dirtsailor made the obvious suggestion of smoked cheese and, while I had thought of it, I hadn't tried it yet.

For this batch I incorporated most all of the suggestions and also decided to use a mix of red and green peppers for a seasonal touch.

On to the pic's.

Well mashed Garlic

Finely chopped Bacon  (Mixed sauce / seasonings on the side)

Garlic and onions added to sauce                                                And the Bacon

Peppers on to roast                                                                     Peeled, Cleaned,  and diced

Smoked Cheddar                                                                       Mixing it up

And, finally finished.  The new additions have taken this recipe to a whole new level.  I am sure that the recipe will continue to evolve.  I have added Dirtsailors suggestion of "What's this here sauce" to a small sample of the cheese spread and think that it is also a worthy addition.

Thanks for checking it out and I hope you all can give it a shot.  Merry Christmas everyone!!

I have no idea how I missed this or the previous discussion, but I'm glad I stumbled into the fun and great looking cheese spread!!! Thanks for sharing!!! And, by all means, if you see it fitting for further evolution of what I think is perfect (but hey, that's just my opinion...don't let me stop you from creating absolute perfection...LOL!!!), please do share that as well.

Hey Eric,

Thanks for checking out the thread and for your generous comments.  I am pretty happy with this recipe but I will keep fiddling with it.  If I make more real progress I'll post them up.

Thanks again for your help in overcoming what I saw as a real hurdle, Chef Jimmie.  I love learning new skills and you helped me with that.
