Smokers, got a question about my new master built smoker. What is the use of the water pan at the bottom of the smoker? I've heard you're supposed to put water in it? What is the positive of doing so?

There are many opinions out there about later pans. 

One of it's uses is a large heat sink to help regulate temperatures.

The other main use is to provide a moist cooking chamber to keep the meat moist. 

I have one in my WSM and Stumps cooker and use it to great success.

you'll find no need to keep water in the pan in the MES. leave the pan in the smoker to help with side to side heat distribution. But the MES is great on its own at holding moisture.
