Double Smoked Ham, Cheddar & Asparagas Quiche ~ Foamheart

Its been pie day at Foamhearts! If you need pie crust recipes or instructions hollar at Richie he's gotta handle on 'em.

We started out with an egg pie which the french call quiche. They are real simple, I started making 'em back when we had chickens. Great dark orange eggs fresh each day. So egg pies, scrambled fried poached custards, etc, etc. etc.... These are really easy, longest part is the crust so I generally just make 'em a day in advance and they turn out nice and flaky that way.

Here's my basic recipe.

2C heavy cream

4 eggs

1C grated cheese

salt & pepper

pinch of nutmeg

1/2C fresh asparagas sauted

1/2C minced double smoked ham (warmed with the sauteed asparagas)

Everything else is just gravy on the rice! Brocolli, spinach, turkey, onions, bacon, tasso, andouille, etc etc etc......

Preheat to 425

Bake @ 425 15 to 20 mins. to set the eggs

Reduce to 310 to 325 and finish at 30 to 45 mins. (untill the custard is almost completely firm).

Remove from the oven, let rest 20 to 30 mins.


LOL.. sorry i wasn't faster! I added a about 1/4 of a peeled and cored fresh Honey Crisp to the plate for serving.

Thats it for a Friday.

While making one crust I went ahead and did another...... as above but with sugar and cinnamin in it to mate with the pie.


Sweet potato pie....... We don't do no whimpy pies around here! LOL.

Throw in a nice cup of coffee and its breakfast, large glass a moo juice and its a snack! Delicious either way.

Its just been a pie kinda day.

Eggs are a huge part of a country diet.If my sweet potato pie recipe is on the boards already and ya want it, let me know. Louisiana has the best sweet potatoes in the world and they make all the difference.

I had not done the Asparagus before, I like spinach or broccolli mostly as my veggies a lot (OR of course green onions), its whatever I can find fresh that looks good. And since the rat cheddar is cowboy cheese its used a lot also. I mean, real cowboys eat quiche.

LOL.... Weeeeeelllll let me tell ya. It is harvest season here and they are cutting all the cane. That means all the little mouses and other critters are coming up from the fields looking for handouts. Sometimes they knock at the door and ask, sometimes you just notice a piece of pie missing. Pop must think its funny because everytime they steal a piece, when I mention its happened again, he just smiles.

BTW For some reason sweet potato pie affects Pop adversely, I mean bring tears to your eyes! He really likes the pies, but they don't like him. It takes awhile between pies to forget why we don't have them all the time. LOL
 
This is kinda freeky strange...I was just thinking about Quiche last night...for a way to use some smoked breakfast sausage links in a dish from today' s smoke...along with some other items to toss into the mix to make a decent, rounded meal of it all. Then, I realized, I have yet to make a pie crust. Oh, dear, now I gotta get a bit more experience with an oven (unless I can push enough smoker temps...LOL!!!) and making/using different types of dough, 'cuz this really got me thinking. I've only had quiche a couple times, made by my girl-friend and her mom, about 35-36 years ago. I don't remember the exact ingredients in the custards, but they were pretty darn tasty...and the texture was just ridiculously inviting. That was all a new experience for me...a pie made from eggs...yeah, did I ever live a sheltered farm-boy life...ha-ha!!!

Glad they are fond memories. Pie crusts eluded me most of my life, why? Because I wanted to make it hard to do. whats a crust do, it just holds the pie together and most folks don't eat them anyway. They eat the pie and leave the crust. When I finially figured that out my pie crusts came out fine. Well I swapped to bread flour also. Seriously pie crusts are like sausage. The colder you keep 'em the better you will like your out come. I always try to make them the day ahead and allow them to sit in the reefer overnight "so the pellicle can form". LOL
