Been cooking professionally for 30 years, have always had both gas and stick burner grills and made due smoking ribs and other things. I bought a MES 30" this summer to "play around" with.

Did a bunch of salmon, brisket, butts, belly bacon, shoulder bacon, & some Polish sausage. Having fun with my new toy.

Also bought the amazin pellet smoker, having mixed results with keeping it lit.

Having trouble keeping the AMNPS lit ??? If you are using a water pan, dump the liquid... add gravel for thermal mass... Keep the upper vent open...
 
No water, vent open. I suspect that it may be operator error, not lighting enough pellets?


Water in the pan turns to steam and suffocates the pellets... the pellets may also be damp... I dry mine in my MES 30 at 275 for an hour +... sure helps them stay lit...
 
I have been using the weed burner that I light the stick burner with, need to pick up a couple of propane cylinders for my torch. I may not be letting it burn long enough either, trial & error I will get there.
