I keep reading "don't use water pan"...................Is there ever a time to use it or is it just spare parts ?
 
I leave mine empty and foiled over. The water pan is part of the heat/smoke disbursement design of the MES since both have to rise up and around the pan. It also serves as another drip pan. In my MES 30 it also shields my AMNPS somewhat from grease/fat drippings.

Hi, I have never had a reason to fill mine with water. Do as daRicksta said.  This is not the only time that the folks that wrote the manual had not used the smoker enough to write the manual.To put it bluntly after you use the smoker 10 times you are probably more qualified than the author was. Once again that is only my opinion.   Jted

After some research, I don't think there is really any reason to use it on an electric smoker. Perhaps if you are doing a specific project that you want to get really moist and have a steaming effect going in there, but otherwise no need, especially if you are trying to supliment your smoke with and AMNPS, as those will not work with a waterpan at all

Gee maybe someone ought to enlighten the Owner. It would save then a whole bunch of money to not have to make another item.

Hi, It's not like they don't know or should know. The water pan does serve a use full purpose. When It is foiled it is a decent drip pan. I don't totally relie on it ( I use a secondary foil pan ) it is a good distributor of heat. It truly helps to even out the heat in the box.   Do a search of Bears posts and look for a post on heat distribution. The work he has done is valuable.  Jted 
 
I'm not near as experienced as others, especially Bear, and know there is some science that says otherwise, but I personally taste a difference when I put liquids in the water pan. I've done broth, bourbon, beer etc for red meats and water or white wine or rum for white meat. It is probably mental and I know I'm in the humbled minority, but it's what I like. Just an opinion.

Hi, Opinions are great.  I am highly opinionated and support different opinions even when I disagree with them. If you ever read many of my posts they are loaded with them. Most likely others will disagree with some of mine.   Jted

Hey Jted, no worries. I have read some of your other posts and agree! Other posts where I mentioned this opinion I've received the full responses which I appreciate and believe, but I can't get around my own taste buds! So to potentially save someones time on this, or other "controversial" issues, I try to make clear if I'm going against the grain that I get it!
