I have a 20lb turkey I plan on spatchcocking in my Masterbuilt electric smoker.   Any recommendations on temp and how much time spatchcocking will save me?  I believe the hottest I can cook at is 275.

At 275 it should take around 20 minutes per pound. Will that big of a bird fit once spatchcocked? You might have to split it in two and cook on two grates.

Yep but, the spatchy bird has much more surface area than whole. So 20 minutes a pound for what is effectively a 10Lb bird, give or take...JJ

I have the 40" model so It may fit.  At least I hope it fits....  I was thinking it would cut my time by at least a third form 30 min a pound.

I would spatchcock it in the kitchen and then put it in the smoker...
