So I am trying my first batch of Baby Backs tomorrow.  Will 3-2-1 work with Baby Backs?  I see Jeff links that to St Loius style (which I've done and they've come out great)  

I was thinking that should work for BB too.

Thoughts?

Also, taking my new beast for its inaugural run.  I'll post pics once I get it up and running.  Ribs should be ready around Vikes Kick Off at 3:30!!!

So 2 open smoke, 2 wrapped, 1 more open...  any rest time on these?

Oh, and pit temp, around 225?

Christening the "Hungry Wolf" with 9 racks of Baby Backs.  Two different rubs.  (Just for a taste test)












 
The 2-2-1 method for baby backs is good for 225* cooking. I cook baby backs at 260-275* for about 3 hours nekkid, and then about 30 minutes for sauce/glaze. I think that the hotter, shorter, nekkid method gives me the finished product that I'm looking for and a slight tug, also.

I like to let them rest for 15 or 20 minutes with foil over the plate, but usually we just dig in if all the sides are ready [emoji]128522[/emoji]. Resting is great for a hunk of meat to let the juices and fat spread out, but with ribs IMO, when they're done, they're done...
