Look at the Brinkman 1500 watt replacement burner. May be right up your alley. But you may need something bigger which would require going to 240v.

reason being the one I recommend mounts to the wall of the smoker, the one I don't recommend mount through the bottom of the smoker, creates a place for grease and water to seep into the bottom. Also harder to move the element when cleaning under it.
 
I can't tell does that brink man come with thermostat? I'm not getting a pie right away. The fridge I acquired is an old fridgedair, only 5 feet high...
Was planning on amns for smoke to start with. When you mount element to side do you out great shield over it?
 
I have the bottom mount one and it works great. I have a diffuser above it to keep grease and drippings from hitting the burner. No problems cleaning around it, or under it. I just pick it up if needed as it just sits on the bottom. Mine is not permanently attached as I use it in a couple of smokers.

You need a controller or PID to run it. This would be a good choice if you don't want to build your own.

Allows you to step the temps which is handy when smoking jerky and sausages.
 
I have the bottom mount as well, wish I didn't. Even with my drip pan there is always grease and drippings accumulating on the bottom. I also don't remove mine,

ive done 2 builds with it, and working on a third.

You can also use a finned strip heater, as high a wattage as you want so long as it fits dimensionally. The key though is you have to use the dual probe I linked with a finned strip heater. The reason being is that it can actually be programmed for the total power output. If you run a finned strip heater at full power with no forced air then they burn out. You can drop the total power output with the dual 1800w controller to match the max watt per sq" for still air ovens. They work very well with this set up. They also have a smaller footprint in the bottom of a fridge smoker, I use a sink drain under the finned strip heater for air intake and it doubles as a clean out drain.

There are so many ways you can set them up. All depends on what you feel like.

ya, its just like how an element is mounted in a stove. It mounts to the back, or if you want the side, and the wires run through the wall of the smoker.

I would put an electrical box on the back and run the element cord into that and then a longer cord with the appropriate plug end to plug into an Auberins dual probe controller. see my above link.

just cut a small hole in the back of the liner and screw it in place with some sheet screws. a little RTV silicone around it before securing to ensure a tight seal

the brinkman doesn't come wth a thermostat. Easy to find them for cheap at home depot, appliance scrap or parts places. They are really inexpensive, the problem is they rarely go below 225f.

Got a pic of this set up? I read somewhere if you mounted to the side you would have to divert the heat.
 
this is my 1st build with the brinkman element that mounts through the bottom. Its not hard to clean under it but its more annoying than had I mounted it through the back. I could have mounted it another inch or two higher


here is the new set up I am using, and this is in a gastro pub running several hrs most days. The finned strip works great, just have to have the right controller so it doesn't burn out I have a heat deflector that is an inch or two wider and 1/2" longer on both ends. Wires come through a small hole in the side and run through the wall of the smoker to my controller. Mounting brackets com apart easy for deep cleaning, the drain is air intake and a drain. No valve on the intake, which is 1.5", have a 2" exhaust with a ball valve to control air intake.

I will be posting some pics of the current build im working in a few weeks when its a little more interesting.

 
So using wall mount element. Does that cause clearance issues, and would you want to put a deflector over it. I'd swing towards the finned strip heater but don't want to burn it out. I'm willing to sorting for the dual probe auber, and if the strip heater is better I'll go that way.
 
I suppose I'm somewhat retentive, I'd like my smoker to be able to hold temp in the low range 100's and be able to dial it to 225 with little fuss... and be repeatable. The pid seems like the grail..... I guess I'm willing to spend a little extra to satisfy my wish...
