Now the wheels are a turning!

Geographically the Middle of the US is Lebanon Kansas. Mileage wise who knows!
 
Looks awesome man!!! Food looks great and the new smoker is a beauty! 10 degree difference from end to end on something of that size is incredible! I don't have that consistency from end to end on my MES 30 haha. Can't wait to see more cooks on your new toy! POINTS!

1 question I have for you has to do with the FB. It looks like you had the fire directly on the firebox bottom and not on a grate? Are you going to put a grate in so that the ash can fall and not choke the fire out?

I have learned in mine that when I am doing a longer smoke if I don't have under my rack cleaned out the ask builds up and chokes it out. Just food for thought.

I thank you for the tip. In all honesty I though that a grate might be necessary.  But for a 3-2-1- smoke it went well without one.  I do believe I need a grate for longer smoke.

Brian, That's a great looking piece of steel. Your ribs turned out looking really good with great color. Same for the bird. You may want to let the next bird just walk on thru. The one that you cooked was trying to give up. I saw his hands up.

Thanks CB Easy smoke for the first time out. I'm not sure if I can trust it overnight yet. Might try a Butt this weekend. Brisket is out of the question until I have a few more smokes on it.
But so far I'm real happy with it.

Thanks Justin. I'll need to try a longer smoke next weekend. That will be the real test! Maybe a forgiving pork butt. So far the new unit is working out just fine!
