I was at a local restaurant supply place the other day and saw a 20 lb piece of beef that was labeled as Tri Tip. Looked more like a brisket to me, didn't look anything like the normal Tri Tip I see at the grocery store. is it normally a large cut that is further cut down by the butcher? If so, I'd like to try it as it was substantially less expensive that at the store.
