I would like to say that you have a great forum here and I am looking forward to becoming a part of the community.I have been a longtime lurker of these forums and finally decided to join and stop in to say hello.I just recently purchased the mes 40" smoker from sam's club and looking forward to using it.I Have already ordered the amnps 5x8 tray to tryout in my smoker and plan on ordering a maverick temp probe also.So,thanks for all the info you guys share with newbs like me. Welcome! Congrats on the new smoker! I'm looking at getting the same one soon, my family and work is not supporting the offset smoker life! Plenty of info here for modifications and techniques! Good luck!
