Had a little project I was working on,growing mine own Bean Sprouts,so this is what we make  Okoy and Egg Rolls

For the Okoy we use

Mung Bean Sprouts, Shrimp, shredded Yam and chopped green onions.( garlic can also be added)



These get mixed with an egg and some flour,water 1 or 2 Tbspn to act as a binder


Mixed


In a pan with 350* Veg. Oil

Use a small saucer or a large spoon to shape


Slide them off with a spoon


Fried up


Home raised Bean sprouts if anyone wants I will post that up.


The Okoy is usually served with Vinegar that has hot pepper in it

Nice my mom used to make a dish like that. I'll have to ask her what it was. I know she learned it taking some Chinese cooking classes in 70's.
