Pork and Apple Stuffed Mushrooms

The players... 
Mushrooms, pork shoulder, chili paste, Coke, Honey Crisp apple, and BACON of course... 



Made a sauce/glaze out of the chili paste and Coke... 



Assembled... 





Onto the Egg... topped with some of the sauce...





After about 30 minutes in the 275 - 300 range...





Pretty tasty - nice little kick from the chili paste...

they do look awesome... a question... what would happen if cooked longer to get the bacon a little more done ??
I like my bacon "wiggly" but would have liked it a little more done on these. The mushrooms were definitely done, and I don't think they could have gone much longer before they would have just lost all integrity... so - to answer your question... longer cooking probably wouldn't work, but what would have is to use thin bacon - this was pretty thick cut. I also could have par-cooked the bacon before wrapping the mushrooms, or the last thing could be to cook at a higher temp.
