So, long story short, I am learning to use my late husband's smoker. (Well, and grill, but I've gotten pretty okay at that.)
It's a Cajun Injector I bought him for Christmas in 2013. He used to do a lot of stuff for us - hams and chicken wings were my favorites.
So, I'm learning how to do it! I smoked some pre-cooked Buffalo Wings last month, and today I'm trying out some wings that I marinated in Frank's and Tony Cachere's. (I bought Jeff's rub, but haven't had time to get the ingredients yet.)
So, some new lessons:
1. Drip pan goes UNDER the heat...
2. Do not sit downwind of the smoker.
