Well in the past 40 days or so anyways.

Cured with 2 applications of dry rub for 7 days before being rolled and in a UMAi charcuterie bag.

Slicing.

I burnt my slicer up so i been slicing by hand, not as thin as i would like.



 
That looks great!  How did you like the UMAi bags, and did you use their rub for this one?  

I hate hearing about the slicer, I live for mine and can feel your pain...

No i did not.

I been in and out of the forum, still having some stomach issues after surgery so sometimes i just cant get into lengthy posting. Soon hopefully.
