I'm doing some babyback ribs today with a new sauce. I made a sample-size run of it Sunday, tried it on some chicken wings & couldn't wait to try it on some ribs.

It was cool, breezy, wet & dreary when I got up so I set up in the garage. Of course now the sun's out, but  too late, I'm rollin'. I'm going with like 70% hickory & 30% peach wood chips & smoking at 260 degrees. I got up early, made my sauce, my BBG rub, got the smoker started & prepped the ribs. Minimal trimming, membrane removed & rub was applied before they went in about 40 minutes ago. In fact, it's probably getting to be time to add some wood chips. Here are a few pics.

After about 2.5 hours, we're about halfway there. I rotated all four cuts around & switched racks.


I also added my corn. Pretty straight forward, basic stuff here since I've never tried the corn in my smoker before. If you've followed any of my other threads this summer you know I like my sides in there too. I've had good luck with beans, mac & cheese & we really liked the twice-baked potatoes I did recently.

With the corn, I just added some olive oil, salt, pepper & butter.

I don't mind sharing at all.

1 cup honey

2 cups ketchup

1 stick butter

1/3 cup vinegar

4 tsp onion powder

2 tbs brown sugar

2 tbs soy sauce

2 tsp garlic powder

2 tbs chili powder (more if you like it spicy)

Combine all ingredients in saucepan over medium-low heat. Cook until warmed through, then simmer 15 minutes.

Well it's all over. The ribs were excellent. I gave them the bend test at 4:45 cook time & they were good, so I sauced them, shut off the smoker & left them in there about 15-20 minutes. I have a couple of really good "sweet" sauces, but this one is tops. I made a good-sized batch, as it also works on beef & chicken as well. The ribs were moist inside, first sweet from the sauce, then the warmness of the chili powder which is almost faint (I don't make it too spicy) & finally the rub, which provided most of the "spiciness".  Both the wife & I really enjoyed them & as usual, I have leftovers to take to work for my lunch.

The corn got a mixed review. The wife liked it a lot more than I did. I didn't dislike it, but I really think I just prefer mine on the stove, where it gets most of it's flavor from the butter. I may have to make a small batch of it again for the wife next time (I'm thinking about a 10 lb pork butt I have in the freezer already), but that's ok. There will still be room for beans or mac & cheese for me.

Wife says the drive-through's closed, but these are ribs I definitely wouldn't mind sharing. You know the ones, when they're THAT good?

LOL...yeah Caddyshack is one of my all time favorites!  That pic has been my avatar for a very long time...every time I look at it, it makes me laugh!

The ribs and corn look like they turned out delicious...nicely done!  And thanks a lot for sharing that sauce recipe...I've already saved that one to my "to do" list.

Thanks guys. My wife doesn't really like spicy, otherwise I would say to double down on the amount of chili powder, as the honey & brown sugar really make it nice & sweet, but it's good either way.

Loved the ribs & sauce, but the wife dug the corn more than I did.
