We are doing our research and thinking about the MES 40 BT.  Would like to have a smoker that I would not have to "babysit".  I have heard that you have to add the chips every hour or so.  We are newbies and this is our first smoker.  I know we are more likely to use the smoker if it is "hassle free".  Need opinions and your advice.  Thanks in advance

Besides the Masterbuilt cold smoker unit, many of use one of the pellet smokers that Todd Johnson makes and sells here:http://www.amazenproducts.com/SearchResults.asp?Cat=12

I own the 5x8 A-MAZE-N Pellet Smoker but have had mixed results with cold smoking using wood pellets. I recently was reminded that the AMNPS also burns sawdust which burns better for cold smoking. That's something I plan to try next year. But what I like about the pellet smoker tray is that it fits inside my MES 30 (also does well in a MES 40). With the MB Electric Cold Smoker Box and other cold smoking attachments are extra pieces of gear that sit outside the smoker and you have to plug in. I like to make smoking as simple as possible. With the AMNPS or one of Todd's other smoker trays you just fill the row with as much pellets or dust that you feel you'll need. A full tray can easily supply 11 hours or so of constant smoke.

Bearcarver just did a review on the 40 bt. He loved it.

Most all if not all of us love our 40 BT's ...
