I grilled the wings over red hot coals after three hours f smoke and the skin was still rubbery!  I need some serious help to achieve bite through skin on turkey!

Looks great! I really like a hot gas grill or the broiler to crisp up my chicken, the turkey skin is probably thicker with more fat I could imagine it taking some time to get crisp. We had chicken wings the other day it took me about 10 min to get them crispy. Any sliced shots of the ribs?
