It's been almost three years now I've had the #3 by Smokin-It Smoker. The electric (smoker box) stainless smokers are by far the best home use smokers on the market.

My Korean marinated briskest cooked all night at 220F while I slept, and the older the you get, the more that counts.

This is how a lazy man smokes a brisket that comes out like a piece of burnt charred Austin Texas Gold!!!

Besides the electric function, the next best feature is you don't have to add water or constantly spray your meat. These pressure sealed doors and double wall insulated boxes keep the moisture where it belongs... Inside the box!

To each is own, but after more than a 1,000 lbs of smoked EVERYTHING for my family/friends/church... These little gems are worth the extra cost.

That looks awesome! Can you tell me about your Korean rub?

I have been overnighting pork butts on my Smokin- it #1 for a while now too.....I toss them on around 9 PM @ 220 and pull the next day. They have run anywhere from 12 to 15 hours to get 195. (Such are the vagaries of different cuts, I guess.). I swear they smell just like bacon in the morning when I check on them!

Soy sauce, orange juice, brown sugar, garlic and ginger paste, orange juice and Korean chili paste and lemon juice. Let the brisket soak in it submerged for 48 hours or longer.

It will be saturated wet, let it stand for 10 mins and then rub it with hot mustard/salt/pepper/brown sugar and ground coffee.

Throw it in the smoker.
